exclusive cacao cuisine in a spectacular setting Rabot Restaurant is one of Saint Lucia’s most popular foodie destinations.

Inspired by the rare cacao growing on Rabot Estate, our exclusive menu uses cacao sometimes as a light and subtle spice, sometimes as a delicate infusion, but always in a natural, healthy and exciting harmony. After all, cacao has been used as a savoury ingredient for over 3,000 years and as a sweet ingredient for only 500.

The restaurant is open to residents and non-residents. For external diners, we recommend that you make a reservation. For booking requests within 24 hours, please call us to confirm your reservation.

We’re as serious about alcohol as we are about chocolate. Opening Hours 10:00H – 23:00H*

Surrounded by cacao on the Rabot Estate, we started stirring it into cocktails – the nutty and buttery nib, the lychee-like pulp, the roasted shells and the creamy chocolate. Then we added other natural, fragrant ingredients from the Estate. Experimentation paved the way for innovation, and soon enough we’d created a playbook of cocktail recipes to delight our guests.

Set within the Rabot Restaurant, the Cacao Bar is the perfect spot for sundowners as you take in the mesmerising views. We also welcome you to come and simply enjoy a dessert in our lounge area. They pair perfectly with our library of cocktails and dessert wines.

This weekend we continue our Live Entertainment Series. Kicking off with Happy Hour at 5pm-6pm, it’s buy one drink get the other half price.

Then as the sun retreats behind Petit Piton and the night comes alive, and MTX Band begins.

Cacao cuisine explores both the sweet and savoury qualities of cacao. The restaurant uses cacao grown on Rabot Estate and by local island growers as a spice, infusion and ingredient alongside fresh Saint Lucian produce, fish, seafood, fruit and vegetables.

Does every dish at Rabot Restaurant taste like chocolate?

No. Cacao is used in several different ways and is often subtle. Roasted cacao nibs can add nutty and toasted flavours, while cacao pulp brings fresh, fruity notes to cocktails, sorbets and ice creams. Chocolate is also used in selected sauces, dressings and desserts.

What is the Cacao Bar?

The Cacao Bar is located within Rabot Restaurant and serves cacao-inspired cocktails, drinks, dessert wines and desserts. It is open from 10:00 to 23:00, with in-house hotel guests welcome to stay later.
